Samphire Debuts at Salishan

When Samphire, the new dining room at Salishan Lodge, opened in March, the restaurant coined the term coastal range cuisine. Chef Andrew Garrison has methodically sourced local partners throughout the coastal range for the freshest farm foods, fish and cheese available. At a minimum, the menu at Samphire will change quarterly with new, fresh selections added nightly based on what’s in season.
